Easy Easter Cake | Fluffy Tails & Big Ears

Easter is one of my favourite times of year. Spring is upon us, Daffodils are sitting in every vase I own, chocolate is an acceptable food group and there are Bunnies adorning everything in shops (seriously I do NOT need any more novelty bunny things)

I got the idea for this treat, combining my loves of chocolate, baking and bunnies, after speaking with my lovely friend Nancy who is also an avid baker. Essentially this is simply a chocolate sponge with a 'well' cut out in the middle for a chocolate cornflake nest and covered in Nutella buttercream.




Genuinely guys I don't even know if it's worth me writing out the recipe for this because it was truly super simple. I followed THIS RECIPE for the sponge, then I let it cool and cut out a well of cake in the middle, that went down about halfway. Once this was done I mixed up some buttercream using THIS RECIPE and folded in 5 heaped table spoons of Nutella. This was roughly smoothed all over the cake (except the well area) to create a sort of 'rustic bark' look. I then mixed up the cornflake mixture (melted 200g Milk Chocolate and folded in plain cornflakes) and filled up the well, ensuring that I built up the sides and left room in the middle for the eggs. All it needed after this was to sit in the fridge for an hour whilst it all set, then I could fill the nest with Mini Eggs.

As you can see I also used the mixture to make mini cornflake nests to sit around the cake and give it more impact. Plus who doesn't love extra cornflake cakes!



It wouldn't be an Easter post if I didn't let the rabbits get involved! I put the cake on the floor for them to check out and it's safe to say, that they were quite eager to do so! JJ with his sweet tooth did try and wrestle away one of the bunnies, but I managed to grab it back before any cannibalisation (hence the blurred photo!). Don't worry I would never let them eat anything like this - they enjoy their over-priced, organic hay too much anyway!
